Liberian Chicken and Shrimp Gravy Recipe
Ingredient
- Chicken- (drumstick and wings)
- Shrimp – a bag of raw shrimp (small)
- Tomato paste
- Onions- 3 balls
- Bell pepper (one of each color)
- Oil -small bottle
- Black pepper- for seasoning purposes
- Maggi cubes
- Season- see picture below
Instruction
Chop or blend your onions, do the same with bell pepper – do not blend onions and bell pepper together.
Season the chicken and fry it golden brown, remove it from the oil
Season shrimp with Bada complete
(Use the same oil) Put oil in the pot, when the oil is hot add blended onions stir till light brown, and add blended bell pepper- Remember to keep stirring (WHEN NEEDED) as you don’t want them to burn. Add a tablespoon of tomato paste (you want the gravy to be medium red, keep stirring, and add shrimp, and three cups of water, and leave it to boil. Remember to taste according to your liking. Add three pieces of bay leaves for flavor and taste. Add two cubes of maggi , and add the chicken. Lower the stove temperature and leave the gravy on till the water is dry. Turn the stove off as your gravy is ready.
Checked Rice
- Rice - Parboiled
- Baby spinach
- Okra
- Oil
- Salt
Instruction
Wash the rice very well, put it in the rice cooker, add one tablespoon of oil to the rice, add a teaspoon of salt, and let it cook. When your rice is cooked to your satisfaction, leave the rice in the rice cooker for now.
Place the okra in a pot and bring it to a boil. When it is cooked, place it in the blender with some of the baby spinach that you have washed and blend very well.
Add blended spinach and okra into the rice and stir very well (until the rice looks like the picture to left. Serve the gravy over the rice. Enjoy!
